标准摘要

Thisstandardappliestomeatcarcasesand/orassociatedcutsmarketedasfitforhumanconsumption.Thepur-poseofthisdocumentistoprovideavarietyofoptionstopurchasersformeathandling,packingandpackaging,andconformityassessmentwhichconformstogoodcommercialpracticeformeatandmeatproductsintendedtobesoldininternationaltrade.Contractorsareresponsiblefordeliveringproductsthatcomplywithallcontractualandspecifica-tionrequirementsandareadvisedtosetupaqualitycontrolsystemdesignedtoassurecompliance.

Theatandardmaycontainreferencestootherintemationalagreements,standardsandcodesofpracticewhichhavetheobjectiveofmaintainingthequalityafterdispatchandofprovidingguidancetogovernmentsoncertainaspectsoffoodhygiene,labellingandothermatterswhichfalloutsidethescopeofthisstandard.CodexAlimentariusCommis-sionStandards,Guidelines,andCodesofPracticeshouldbeconsultedasthecompetentinternationalrefercncecon-cerninghealthandsanitationrequirements.

Allmeatandmeatproductswilloriginatefromanimalsslaughteredinestablishmentsregularlyoperatedundertheapplicableregulationspertainingtofoodsafetyandinspection.
