Thisstandardspecifiesaroutinemethod(theGerbermethod)forthedeterminationofthefatcontentofmilkandincludesguidanceonthedeterminationoftheappropriatecapacityofthemilkpipetteandonthedeterminationofthecorrectionstoapplytotheresultsifthemilkisnotofaveragefatcontent.Theprocedureforcheckingthecapacityofthemilkpipetteisspecifiedinanannex.
Themethodisapplicabletoliquidmilk,wholeorpartiallyskimmed,raworpasteurized.
Withmodifications,detailsofwhicharegiven,itisalsoapplicableto:milkcontainingcertainpreservatives;milkthathasundergonetheprocessofhomogenization,inparticularsterilizedmilkandultraheat-treated(UHT)milk;andskimmedmilk.
